Sterling Silver Vs Certified Angus Beef
Sterling Silver® Premium Meats are an important part of delivering amazing dining experiences for your customers. Our beef is developed specifically for select restaurants that carefully choose their ingredients to ensure the very best in every dish. Our stringent selection process ensures all our cuts are guaranteed to have the qualities you'll see here.
Every piece of beef is evaluated by the USDA and awarded shields and labels as such. This system assures consumers the products they buy have gone through a rigorous review process by highly skilled graders and auditors who follow the official grade and process standards developed, maintained and interpreted by USDA's Agricultural Marketing Service1.
HIGH QUALITY GUARANTEED
Sterling Silver only uses the top ⅔ of all meat graded Choice using these parameters. Choice beef is high quality, tender, juicy and flavorful so you know you'll get premium quality in every bite.

Marbling is the small, white lines of fat interlaced in the muscle fibers of beef. When beef is cooked to the proper temperature, this fat melts into the meat and produces flavorful, perfectly textured beef.
GRASS VS. GRAIN
While grass-fed cattle have a certain quality reputation throughout the industry, grain-fed cows are more readily able to produce consistent, rich marbling. That's why Sterling Silver selects cattle that are grain-fed and only produce marbling that is moderate, slightly abundant or moderately abundant. It is important to note that while the USDA values marbling, it is never at the cost of animal welfare. This is an important distinction we also uphold at Sterling Silver.
Aging is what we do to give meat time to develop a more flavorful profile. It is the process by which beef is stored at specific temperatures allowing microbes and enzymes in the meat to break down muscle tissue, making it more tender.
All Sterling Silver cuts are aged a minimum of 21 days* to ensure the meat has had enough time to bring you a consistent, delicious product that you can proudly serve your guests.

Tenderness is an important distinction that contributes heavily to consumer satisfaction. While grading beef is an important part of evaluating the quality of the meat, tenderness is a factor that will keep your customers raving about your dishes.
EXCEEDING EXPECTATIONS
Sterling Silver Premium Meats is proud to boast that we are USDA Certified Tender*. Seeing as this is one of the most significant reasons consumers enjoy beef cuts, you can be assured your guests' expectations are met, if not exceeded, when you serve Sterling Silver at your establishment.

We can say a lot of great things about our beef. But we like the way our chef partners have described it.

"I'm just going to go with the best product. That's one thing you don't want to worry about is consistency. And honestly, I tell you, Sterling Silver has really been consistent, and is just a great product."
Chef Nick Unangst
SERG Restaurant Group, Sterling Silver Signature Chef
"I started using Sterling Silver by accident. It was a throw in during a cutting with some other companies and I wanted another viewpoint and it actually won the cutting, and every cut that we tried was not what I expected. We've been using Sterling Silver ever since."
